Capers on the Square's New Chef
Oddly enough, Chef Jason Davenport did not begin as a chef at all. He graduated from North Carolina State University with a Bachelor of Science in Computer Engineering and a Minor in Physics. He later certified twice as a member of the Court of Master Sommeliers, the second time, advanced. Thus, cooking did not even garner a second or a third place in his wheelhouse (at first), the latter taken by a love of wine.
No stranger to the restaurant industry, Jason worked as a server and wine steward at Le Bec Fin, named the Conde Nast best restaurant in the country in 1994.
Later, he acted as general manager for Enoteca Vin under its first chef, Andrea Reusing as well as Vin’s second chef, Ashley Christensen, both named best chef of the southeast in 2011 by James Beard.
While managing the inner workings of most of the farm to table restaurant at Enoteca Vin as well as managing 80 wines by the glass and a 2500 bottle wine list, Davenport was awarded the 2002 best of award of excellence by Wine Spectator. He was acknowledged three more times by Wine Spectator, most recently in 2014 for his work with Back Porch Oyster Bar in Dahlonega.
The word “sommelier” translates simply to “steward of wine,” and this is what we have found to be our new Chef’s secret passion. Not only a love of wine, however, but also a love of flavor, local food, and dining as experience, rather than merely sustenance.
Since arriving at Capers, Davenport has brought a new sense of calm and ease to what we are trying to accomplish in the front of the house. He believes in us to take care when selling, presenting, and serving his food, and we in turn believe in him.
More importantly, Jason, along with the rest of the staff at Capers are working together with a shared passion to present you with an experience that surpasses a simple night out. The cuisine of the Mediterranean offers a unique blend of culture and flavor, and that is what we at Capers want to share with you.
